Abstract

PURPOSE: To obtain a product having safety as a food from an insoluble or soluble enzyme industrially advantageously, by autolysis of the enzyme under specific conditions.
CONSTITUTION: Yeasts, e.g. beer, sake, bread, pulp waste liquor, molasses, and petroleum yeasts, are suspended in an aqueous medium in a concentration ≤15%, and autolyzed at pH3W8, 30W50°C, and a concentration of organic solvent of 0W 5% [the volume of the organic solvent/(the volume of the suspension +the volume of the solvent)×100] for 20hr or longer to recover the enzymes, e.g. invertase, retained on the cell walls, as an insoluble enzyme formula. The contents of the yeasts are recovered as a yeast extract (soluble). The insoluble one can be converted into a soluble one with cytolysin.
