Abstract

PURPOSE:To prepare a dessert food free from seaweed and acetic acid odors, by mixing or attaching a syrup adjusted to pH 2.8-3.8 to a gelatinized agar containing a fruit juice. CONSTITUTION:Agar is dissolved in hot water to form a hot sol, which is mixed with a fruit juice, table luxuries, organic acids, and, if necessary, perfumes and colorants, and cooled to give a gel. The gel is cut to prisms of size about 1.5-4mm, and filled into a container and sealed to give a principal part, to which a syrup adjusted to pH 2.8-3.8 is attached. Alternatively, the part is mixed with the syrup of pH 2.8-3.8, and filled into a cup.
