Abstract
PURPOSE: Mustard butter is composed of an oil-in-water-in-oil type double emulsified oil composition consisting of the outer phase of oil and the inner phase of oil-in- water type emulsified oil containing mustard oil-containing oil as the despersion phase, thus preventing the reduction of pungency caused by evaporation of the mustard oil.
CONSTITUTION: After mustard oil is mixed with oil to form the innermost phase, the innermost phase is combined with the intermediate phase containing water, emulsifier, table salt and water-soluble high polymer and they are stirred at 50W 60°C with such violence that they do not cause phase separation, then treated with a homogenizer to given an oil-water emulsion. Susequently, the oil which has been prepared separately as the outermost phase is mixed with the resulting emulsion at 50W60°C and they are plasticized with a rapidly cooling type plasticizer to give the objective oil-in-water-oil type double emulsified composition. The ratio of the innermost phase oil to the oil-in-water phase emulsion for the inner phase is suitably 25W50wt% and the weight ratio of the inner phase oil-in-water emulsion to the outermost phase oil is suitably 20:80W50:50.
