Abstract
PURPOSE:To prepare a fish-paste product having improved springiness, by adding tyrosinase and a substrate of tyrosinase to the raw material of the paste. CONSTITUTION:The desired paste is prepared by adding (A) tyrosinase pref. having low proteinase activity and (B) a substrate of tyrosinase such as L-tyrosine, dihydroxyphenylalanine, etc., to the raw material of the paste at an arbitrary stage of the paste preparation, pref. at the grinding stage.
