Abstract

PURPOSE: To prevent the development of irritant acidity caused by heat, and the loss of the harmonized flavor and taste, in the preparation of cooked food containing O/W-type emulsion and having acid taste of acetic acid, by using acetic acid and gluconic acid as acid components.
CONSTITUTION: In the preparation of cooked food containing O/W-type emulsion emulsified with yolk and having aicd taste of acetic aicd ontained therein, gluconic acid is added, together with acetic acid, to the food at an arbitrary stage of the preparation. The weight ratio of gluconic acid to acetic acid is 7/3-3/7. An example of the cooked food is potato garni prepared by dressing mashed potato with mayonnaise.
