Abstract

PURPOSE: To obtain a dry sheet having well-balanced flavor and color by inserting thin flackes of a conditioned dried bonito between two sheets of release paper, and by hot-pressing the bonito flakes.
CONSTITUTION: A dried bonito is shaved into a threadlike form of 20W80μ, and conditioned to a moisture content of 18W24%. The bonito is seasoned with powder thick malt syruo, lactose, α-starch, and if necessary seasonings, e.g. common salt, sugar, or spices, and inserted between two sheets of release paper, and hot-pressed.
