Abstract

PROBLEM TO BE SOLVED: To produce a beverage of teas excellent in aroma, flavor and quality without emitting an unpleasant retort odor by extracting the teas with cold water at a prescribed temperature or below, removing the resultant cold water extract solution and then reextracting the residual teas with hot water at a temperature within a prescribed range. SOLUTION: When a beverage of teas such as green tea of middle grade, toasted green tea or refined green tea is produced as a canned beverage, the teas are extracted with cold water at <=20 deg.C and the resultant cold water extract solution is then removed. The residual teas are subsequently reextracted with hot water at 30-95 deg.C to afford the beverage of the teas. The beverage of the teas is preferably the one for thermal sterilization.

号公報)、サイクロデキストリンを緑茶抽出液に添加す
る緑茶飲料のレトルト臭除去方法(特開平1−1743
28号公報)、アスコルビン酸を溶解した溶液を用いて
緑茶葉を抽出する緑茶飲料の製造方法(特開平2−13
348号公報)、不活性ガス雰囲気下で緑茶を抽出する
茶飲料の製造法(特開平2−291230号公報)及び
pH7以上の水性媒体を用いて緑茶から茶エキスを抽出
