2. Description of the Related Art In general, bread, Western confectionery, etc. are placed on a baking plate and baked in a heating furnace at 150 to 250 ° C. The baking plate is generally composed of a shallow steel container, but it is necessary to apply a releasing oil or fat such as vegetable oil to the surface of the baking plate in advance in order to prevent burning of the dough during the baking process. But,
The release fat and oil applied on the baking plate may be charred during burning to cause charring, which not only requires a great deal of effort to clean the baking plate, but also sometimes peels off the baking plate. There is a problem that it adheres to the dough and the bottom of food and impairs the quality of food. Further, since the applied release fat and oil adheres to the dough and is heated, oxidation progresses from the stage of heating and baking on the baking plate, which not only deteriorates the taste of food but also causes deterioration or discoloration. Makes food last longer.

In order to solve this problem, a technique has been developed in which a resin having releasability such as a silicone resin or a fluorine resin is pre-baked on a baking plate, but these resin materials are expensive. It is only applied to a special baked plate because of its short service life and deterioration of mold release performance due to scratches on the baked release resin layer.

When steam-cooking steamed dishes such as steamed shumai and steamed bread in addition to foods prepared by placing dough on a baking plate such as bread and Western confectionery mentioned above and heating and baking, Since the food comes into direct contact with the inner lid of the steamer, sticking to the inner lid of the food occurs, resulting in problems such as impairing the appearance of the food.

Recently, in order to solve such a problem, a sheet to be laid between the food and the grill or the like or between the food and the inner lid of the steamer has been developed. This has a structure in which a barrier layer and a silicone resin coating layer are sequentially laminated on the base paper, but in the cooking of the above foods, most foods contain water and oil, It becomes water vapor and penetrates in the thickness direction of the paper. At this time,
If the barrier layer lacks water resistance, oil resistance and water vapor permeability, it may cause dissolution of the barrier layer and generation of pinholes, resulting in deterioration of peelability of the food product and oil penetration. Therefore, the barrier layer is water resistant,
It is important to have oil resistance and water vapor permeability. Furthermore, since the silicone resin coating layer is provided on the surface of the barrier layer, the barrier layer must be provided with a silicone resin solution permeation preventive performance.

Although there is a strong demand for an underlayment base material for heating cooking having a penetration preventive property for silicone resin solution and an underlaying paper for heating cooking having a high degree of water resistance, oil resistance and water vapor permeability, these characteristics are still required. The current situation is that there is no product that can meet the requirements.

The base paper used in the present invention is a chemical pulp such as bleached hardwood kraft pulp and bleached softwood kraft pulp,
Base paper using mechanical pulp such as GP, RGP, TMP as a raw material, and fine paper, medium-quality paper produced by a known fourdrinier multi-cylinder machine, fourdrin Yankee paper machine, cylinder paper machine, etc. It includes acidic paper such as simple gloss paper and kraft paper, neutral paper, and alkaline paper. The base paper contains papermaking auxiliary agents such as a paper-strengthening agent, a sizing agent, a filler, a retention aid, etc., and if necessary, starch, polyvinyl alcohol, etc. can be applied by a size press or coating equipment such as a gate roll coater. Chemicals such as polyacrylonitrile are applied. There is no strict limitation on the amount of the filler, but a large amount of the filler may impair the water vapor permeability of the present invention, so that it is preferably 10% or less based on the weight of the absolutely dry pulp.

The basis weight of the base paper used in the present invention is 3
It is preferably in the range of 5 to 45 g / m 2 . By the way, when the basis weight is less than 35 g / m 2 , the strength of the paper is weak and problems in practical use tend to occur. On the other hand, when the basis weight exceeds 45 g / m 2 , water vapor permeability is impaired.

The polyvinyl alcohol used in the present invention must have a polymerization degree in the range of 1500 to 1800. If the polymerization degree is less than 1500, the film-forming property is poor and the desired water resistance is Oil resistance cannot be obtained. On the other hand, when the degree of polymerization exceeds 1800, the desired water resistance and oil resistance are obtained, but the water vapor permeability is impaired. Incidentally, if the degree of polymerization satisfies the above range, the degree of saponification of polyvinyl alcohol and the presence or absence of modification such as carboxyl group and acetoacetyl group are not particularly limited and can be arbitrarily selected. Examples of the polyvinyl alcohol include NH-17Q (polymerization degree 1700) commercially available from Nippon Synthetic Chemical Industry Co., Ltd., and PVA-117 (polymerization degree 1700) commercially available from Kuraray Co., Ltd.
Etc. are equivalent. On the other hand, the polystyrene-acrylic acid ester polymer-polyvinyl alcohol copolymer used in combination with polyvinyl alcohol includes: -polystyrene produced by polymerization of styrene monomer, -alcohol decomposition method of acrylonitrile, and propylene direct oxidation method. Acrylic ester polymers such as methyl acrylate, ethyl acrylate, butyl acrylate, and 2-ethylhexyl acrylate that are produced: -Any saponification degree (usually 60 to 99.8 mol%), any polymerization degree (usually 300) To 1800), or a partial or complete ester of an unsaturated carboxylic acid, or a so-called post-modified polyvinyl alcohol which is esterified with acetoacetic acid. Commercially available "PA -25 "," PAE-2
8 "is equivalent. This adhesive has excellent solvent resistance and oil resistance, and when used in combination with the polyvinyl alcohol used in the present invention, has an effect of preventing penetration of a silicone resin solution and further oil resistance after coating with silicone resin. Will be a positive contribution.

The blending ratio of the above-mentioned polyvinyl alcohol and polystyrene-acrylic acid ester polymer-polyvinyl alcohol copolymer is not particularly limited, and the desired silicone resin solution permeation-preventing performance, after silicone resin coating, is obtained. It can be optionally blended depending on the water resistance, oil resistance, and water vapor permeability.

If necessary, auxiliary liquids such as a dispersant, a water-proofing agent, a lubricant, an antifoaming agent, a coloring agent and an antiseptic agent may be added to the coating liquid as needed. The coating liquid obtained as described above can be coated on the base paper in a known coating facility arbitrarily selected from a gate roll coater, a bar coater, a roll coater, an air knife coater, a blade coater and the like. .
The coating amount of the coating liquid is extremely important for obtaining a desired quality, and it is necessary to control the coating amount within a range of 3 to 7 g / m 2 in terms of absolute dry weight. By the way, when the coating amount is less than 3 g / m 2 , the barrier layer cannot sufficiently cover the surface of the base paper, and it is difficult to prevent the penetration of the silicone resin solution or the penetration of water and oil from the food.
