た基本構成を有するものである。 そして、回転軸の作動によりパケットを間欠的に回転せ
しめつつ、順次パケット内に給液パイプおよび注入パイ
プを介して一定量の豆乳と凝固剤を供給し、撹拌翼によ
り撹拌して凝固せしめるものである。 しかしながら、上述の如く構成された従来の凝固装置は
、放射状に設けられた所要数のパケット毎に一定量づつ
凝固を行わしめるものであるから、非常に凝固効率が悪
いのみならず、装置自体が極めて大型化しやすい欠点が
あった。 また、撹拌翼により撹拌して混合するものであるから、
均一な撹拌混合がしずらく、ひいては、撹拌ムラ等を生
じて品質のバラツキを惹起せしめやすいものであった。 さらに、撹拌凝固の作業は開放下に行うものであるから
、雑菌や異物等が混入しやすく、衛生的な面から必ずし
も満足し得ないものであった。 この発明は、従来の問題点を一挙に解決し、密閉下で混
合および凝固を極めて効率良く、しかも確実に行うこと
が出来るコンパクトに構成された豆乳の凝固および凝固
剤混合装置を提供するにある。

のみならず、混合・凝固を密閉下で極めて衛生的に行う
ことができるものである。
