Calorie restriction has become a serious and real problem not only for people suffering from obesity but also for ordinary people, and various methods have been used, one of which is the use of low-calorie artificial sweeteners to replace sugar. It has been adopted. Among these artificial sweeteners, only reduced malt II (Multil) is approved as a "low calorie sweetener" by the Ministry of Health and Welfare as a special nutritional food.

Maltitol, which was conventionally used as an indigestible class II substance that does not provide energy, has recently been developed through fermentation by Escherichia coli and the production of organic acids (acetic acid, propionic acid, butyric acid).
Due to the processes of absorption and metabolism, the evaluation of its energy was called into question. In January 1990, an international symposium ``Energy evaluation of indigestible IR products'' was held, and the current energy evaluation of maltitol was revised from 0.4 kcal per gram to about 2.0 kcal per gram.

Currently, the approval standard for low-calorie foods as special nutritional foods is defined as containing 50% or less of the content of normal similar foods, and low-calorie sweeteners made from maltitol will have to be reconsidered. It's arrived.

On the other hand, a characteristic trend in Japan's dietary habits in recent years is a decrease in the intake of grain foods, and an increase in the intake of high-calorie fatty foods and refined processed foods. In particular, an increase in the intake of highly refined foods leads to a decrease in the intake of indigestible dietary fiber, leading to obesity due to excess energy intake. As a result, it not only causes constipation but also many non-infectious intestinal diseases, diabetes, gallstones, and other adult diseases. For this reason, people are calling for a review of their dietary habits from the perspective of preventing obesity-adult diseases, and the importance of consuming dietary fiber is being reaffirmed.

As described above, the necessity of ingesting foods and beverages that are low in calories and contain a large amount of dietary fiber has become popular, and expectations have been placed on the development of foods with such characteristics. Under these circumstances, the present inventors have developed a low-calorie sweet food that can easily ingest the above-mentioned dietary fiber necessary for maintaining health in daily life, and also meets the approval standards for special nutritional foods. The present invention was completed by focusing on the material.

In general, from the viewpoint of ease of use, sweeteners are preferably in liquid form, and the dietary fiber used in the present invention is required to be water-soluble. Water-soluble dietary fibers include pectin, guar gum,
Glucomannan and the like have been well known. However, because of their high viscosity, sweeteners containing them have the disadvantage of not being able to pass through fluid (liquid) foods. As a result of various studies, the inventors of the present invention have overcome this disadvantage by
According to Hans H. Rennhard, polydextrose is the most suitable dietary fiber that can be advantageously used in the sweetener that is the object of the present invention.
As a result of extensive research based on the findings from U.S. Pat. No. 3,766,165, the present invention has been completed.
