近で詰ったり破壊したりすることがなく、また管路内を
流れる食品材料の外周側全体から通電するため、加熱ム
ラ、温度ムラが生じるおそれが少なく、かつ弱電流によ
り容易に温度微調整を行なうこともでき、さらには電極
体の面積(通電に使用される内周面面積)を任意に大き
くすることができるため、安定した通電が可能であり、
また電極体の傷みや電極体金属の食品材料中への溶出を
最小限に抑えることができ、さらには構造が簡単で取付
けも容易であり、そのため低コスト化が可能であるとと
もに、電極体等の洗浄も容易に行なうことができるから
、殺菌のための加熱の用途にも最適である。

的に段差がない状態で接していることを特徴とする、流
動性を有する食品材料の連続加熱装置。
