Claims (22)
- 閉鎖された容器(2)内に満たされた食品を低温殺菌するための殺菌装置(1)を駆動操作する方法であって、
食品で満たされて閉鎖された容器(2)を、移送手段(7)を用いて移送方向(9)に複数の処理ゾーン(3)を通して移送するステップと、
前記処理ゾーン(3)内で、前記容器(2)の外側(6)へ温度調節された水性の処理液(5)を供給することにより、前記食品を処理するステップであって、各処理ゾーン(3)へ供給導管(15)を介して所定の温度を有する処理液(5)は、次のように、すなわち閉鎖された前記容器(2)内の前記食品が、移送方向(9)において少なくとも1つの加熱ゾーン(10、11)内で予熱され、移送方向(9)において次に少なくとも1つの殺菌ゾーン(12)内で殺菌温度に加熱され、移送方向(9)において次に少なくとも1つの冷却ゾーン(13、14)内で冷却されるように供給され、
前記処理液(5)は、容器(2)へ供給された後に、前記処理ゾーン(3)内で集められ、集められた処理液(5)は、再利用のために、循環回路(23)の循環導管(24)を介して少なくとも1つの処理ゾーン(3)へ再び供給され、
前記処理液(5)にプロセス化学薬品が添加される、ステップと、
を有する方法において、
前記処理液(5)にプロセス化学薬品として、次亜塩素酸、過酢酸、二酸化塩素及びブロノポールからなるグループから選択された1つの殺菌剤、又はこのグループから選択された複数の殺菌剤の混合物が、前記1つの殺菌剤の濃度、又は前記複数の殺菌剤の前記混合物の合計濃度が0.4mmol/Lを上回らないように、配量され、
前記処理液(5)にプロセス化学薬品として、少なくとも1つの無機又は有機の酸を有するpH調整剤が配量され、処理液(5)のpH値が3.5から7.0の領域に調節される、ことを特徴とする方法。 - 前記処理液(5)に殺菌剤として二酸化塩素が配量される、ことを特徴とする請求項1に記載の方法。
- 前記殺菌剤は前記処理液(5)の体積流量に配量され、前記処理液(5)の体積流量がは流体動力学的に冷却ゾーン(14)へ通じる循環導管(24)内に流れる、ことを特徴とする請求項1又は2に記載の方法。
- 前記殺菌剤は、循環回路(23)又は処理ゾーン(3)内に配置されている少なくとも1つの配量点(33)において前記処理液(5)に配量され、前記配量点(33)において20℃から55℃の温度を有する前記処理液(5)が流れる、ことを特徴とする請求項1~3の何れか一項に記載の方法。
- 前記殺菌剤は、少なくとも1つのバイパス(28)内で流体動力学的にメンブレン濾過装置(29)に続いて配置されている少なくとも1つの配量点(33)において前記処理液(5)に配量される、ことを特徴とする請求項1~4の何れか一項に記載の方法。
- 前記処理液(5)内の殺菌剤濃度の少なくとも1つの実際値が、少なくとも1つの測定点(35)において、少なくとも1つの殺菌剤濃度測定センサ(34、39)を用いて検出され、前記処理液(5)内の前記殺菌剤の濃度は、少なくとも1つの測定点(35)において検出された実際値に基づいて、少なくとも1つの配量装置(32、38)を用いて、少なくとも1つの配量点(33)において前記殺菌剤を配量することにより、前記殺菌剤の濃度のためのあらかじめ定めることのできる目標値に関して調節される、ことを特徴とする請求項1~5の何れか一項に記載の方法。
- 前記殺菌剤濃度の少なくとも1つの実際値が、前記循環回路(23)又は前記処理ゾーン(3)内に配置されている少なくとも1つの測定点(35)において検出され、前記測定点(35)において、20℃から55℃の温度を有する前記処理液(5)を流れる、ことを特徴とする請求項6に記載の方法。
- 前記処理液(5)に、硫酸、リン酸、ギ酸、酢酸、クエン酸、グルコン酸、乳酸、グルコヘプタン酸からなるグループから選択された少なくとも1つの酸を有するpH調整剤又はこのグループから選択された酸の混合物が配量される、ことを特徴とする請求項1~7の何れか一項に記載の方法。
- 前記pH調整剤は、少なくとも1つの配量点(33)において前記処理液(5)に配量され、前記配量点(33)において、40℃から90℃の温度を有する前記処理液(5)が流れる、ことを特徴とする請求項1~8の何れか一項に記載の方法。
- 前記処理液(5)にプロセス化学薬品として、グルコン酸、乳酸、クエン酸からなるグループから選択された1つの錯化合物を形成する酸、又はこのグループから選択された複数の酸の混合物が配量され、前記1つの錯化合物を形成する酸の濃度、又は前記複数の酸の前記混合物の合計濃度が2.2mmol/Lを上回らないようにする、ことを特徴とする請求項1~9の何れか一項に記載の方法。
- 少なくとも1つの錯化合物を形成する酸は、少なくとも1つの配量点(33)において前記処理液(5)に配量され、前記配量点(33)において55℃から95℃の温度を有する前記処理液(5)が流れる、ことを特徴とする請求項10に記載の方法。
- 前記処理液(5)にプロセス化学薬品として、1ヒドロキシエタン(1、1ジホスホン酸)、3カルボキシ-3ホスホノアジピン酸、ジエチレントリアミンペンタ(メチレンホスホン酸)、アミノ-トリス(メチレンホスホン酸)からなるグループから選択された1つの錯化合物を形成するホスホン酸、又はこのグループから選択されたホスホン酸の1つのホスホン酸塩、又はこのグループから選択された複数のホスホン酸及び/又は複数のホスホン酸塩の混合物が、前記1つの錯化合物を形成するホスホン酸又は前記1つのホスホン酸塩の濃度、又は前記複数のホスホン酸及び/又は前記複数のホスホン酸塩の前記混合物の合計濃度が0.2mmol/Lを上回らないように、配量される、ことを特徴とする請求項1~11の何れか一項に記載の方法。
- 少なくとも1つの錯化合物を形成するホスホン酸及び/又は少なくとも1つの錯化合物を形成するホスホン酸塩は、少なくとも1つの配量点(33)において前記処理液(5)に配量され、前記配量点(33)において、55℃から95℃の温度を有する前記処理液(5)が流れる、ことを特徴とする請求項12に記載の方法。
- 前記処理液(5)にプロセス化学薬品として二価の亜鉛塩が配量され、二価の亜鉛塩の濃度が0.06mmol/Lを上回らないようにする、ことを特徴とする請求項1~13の何れか一項に記載の方法。
- 前記処理液(5)にプロセス化学薬品として、ポリリン酸、水溶性のポリアクリレート及びマレイン酸とアクリル酸からなるコポリマーのグループから選択されたオリゴマー又はポリマー物質、又はこのグループから選択されたオリゴマー又はポリマー物質の混合物が配量され、配量されたオリゴマー又はポリマー物質の濃度又は配量されたオリゴマー又はポリマー物質の合計濃度が0.4g/Lを上回らないようにする、ことを特徴とする請求項1~14の何れか一項に記載の方法。
- 前記処理液(5)にプロセス化学薬品として、リン酸エステル又はリン酸エステルからなる混合物が配量され、1つのリン酸エステルの濃度又は複数のリン酸エステルの合計濃度が0.1g/Lを上回らないようにする、ことを特徴とする請求項1~15の何れか一項に記載の方法。
- 前記処理液(5)内に含まれる化学物質及び/又は少なくとも1つの添加されたプロセス化学薬品及び/又は少なくとも1つの添加された内部標準物質の濃度の少なくとも1つの実際値が、少なくとも1つの測定点(35)において少なくとも1つの濃度測定センサ(34)を用いて検出され、少なくとも1つの含まれる化学物質及び/又は少なくとも1つの添加されたプロセス化学薬品の濃度が、少なくとも1つの測定点(35)において少なくとも1つの濃度測定センサ(34)を用いて検出された実際値に基づいて、少なくとも1つの配量点(33)において少なくとも1つの配量装置(32)を用いて少なくとも1つのプロセス化学薬品及び/又は少なくとも1つの添加されたプロセス化学薬品を配量することによって、前記処理液(5)内に含まれる少なくとも1つの化学物質及び/又は少なくとも1つの添加されたプロセス化学薬品及び/又は少なくとも1つの添加された内部標準物質の濃度のためのあらかじめ定めることのできる目標値に関して調節される、ことを特徴とする請求項1~16の何れか一項に記載の方法。
- 少なくとも1つのpH測定センサ(34、42)を用いて処理液のpH値の少なくとも1つの実際値は、少なくとも1つの測定点(35)において検出される、ことを特徴とする請求項17に記載の方法。
- 前記処理液(5)のpH値の少なくとも1つの実際値が、少なくとも1つの測定点(35)において検出され、前記測定点(35)において40℃から90℃の温度を有する処理液が流れる、ことを特徴とする請求項18に記載の方法。
- 少なくとも1つのCa2+及び/又はMg2+測定センサ(34、44)を用いて、少なくとも1つの測定点(35)において、前記処理液(5)の水硬度の実際値が検出される、ことを特徴とする請求項17~19の何れか一項に記載の方法。
- 少なくとも1つのCa2+及び/又はMg2+測定センサ(34、44)を用いて、前記処理液の水硬度の実際値は、新しい処理液のための供給導管(37)内に配置された少なくとも1つの測定点(35)において検出される、ことを特徴とする請求項20に記載の方法。
- 新しい処理液のための供給導管(37)内に配置されている少なくとも1つの測定点(35)において、供給された新しい処理液の伝導率の実際値が検出される、ことを特徴とする請求項1~21の何れか一項に記載の方法。
