更に図3(c)に示すように、調理済み副食材料52及び含水混合物51が充填された容器20を封止材40で封止する。この封止はシート状又はフィルム状の封止材を、容器20上端の周縁部とを熱溶着加工などで結合させるものであり、微生物を遮断する密封が可能なものであればよい。封止工程は、従来公知の任意の封止用装置により行うことができる。封止工程においては、容器20内を真空にしたり、ガス置換などを行ってもよいが、行わなくてもよい。

この殺菌工程により、微生物を死滅させ、本実施形態の冷蔵食品10の保存期間を上記のものとすることができるうえに、未糊化状態の主食素材55におけるデンプンを糊化して主食素材55を可食化することができる。

得られた実施例1の容器付き冷蔵食品は、見た目において、主食部(米飯)及び副食部とが混合せずに分離されていた。得られた副食部32の粘度を10℃にて(株)ATAGO社製VISCO-895で測定したところ、202,856mPa・sであった。副食部は希釈等は行わず、そのまま粘度を測定した。
冷蔵食品10を平面視したときに、主食部31中、副食部32との接触により変色した部分は、主食部31の全平面視面積の5%以下であった。また主食部31と副食部32の境界線33に略垂直であって且つ容器底面23aに対しても略垂直な断面において、主食部31中、副食部32との接触により変色した部分は、主食部31の前記断面の面積の5%以下であった。
この容器付き冷蔵食品を、電子レンジで加熱して喫食したところ、主食部及び副食部の食感がよいものであり、特に主食部にべちゃつきやぬめりがないものであった。
