表8に示すように、本実験例の結果、二段半連続MNB-CO2処理を行った試料は、第二容器28内における試料の滞留時間が30minのときに、酢酸エチル、イソブチルアルコールおよびイソアミルアルコールがそれぞれ90.1%、101.5%、93.9%残存していた。なお、イソブチルアルコールは未処理よりも二段半連続MNB-CO2処理の方が増加しているかのような数値を示したが、これは測定誤差であると考えられる。また、酢酸イソアミルおよびカプロン酸エチルは、このときそれぞれ83.4%および80.0%残存していた。

比較のため、二段半連続MNB-CO2処理をしないで生酒の加熱処理のみを以下のとおり行った。生酒は、二段半連続MNB-CO2処理に供するものと同じもの(実験例5で用いた生酒と同一工程で醸造され、実験例5で用いた生酒と同一の容器に収容された状態で入手した生酒)を用いた。生酒が内部に収容された300mLバイアル瓶を、70℃に設定されたウォーターバス内に入れ、生酒の中心部の温度が65℃に達した時点でバイアル瓶をウォーターバスから取り出した。なお、比較例18においては生酒は攪拌していない。加熱処理された生酒は、バイアル瓶ごと冷蔵庫内に静置することによって冷却し、上記官能評価に供した。

本実験例における官能評価の結果を図19に示す。なお、図19においてMNBと表記したグラフは二段半連続MNB-CO2処理を行った試料に対する結果を示している。図19に示すように、官能評価の結果、加熱処理を行った生酒(比較例18)は未処理の生酒(比較例19)よりも香り、味ともに劣る評価となった。これに対して、二段半連続MNB-CO2処理(実施例11)を行った試料は、加熱処理(比較例18)を行った酒よりも香り、味ともに高い評価が得られた。

これらの結果から、第一容器11において連続して試料を供給しつつ連続して試料を排出しても、試料には十分にMNB-CO2を混合することができることが分かった。
