【解決手段】生薬成分、酸味料、及び魚類抽出物を含む飲料組成物が充填された容器詰飲料であって、前記生薬成分は、杜仲葉抽出物及び/又は人参抽出物を含み、前記魚類抽出物は、魚類の魚卵、卵巣、卵巣膜及び/又は卵巣外皮からの抽出成分であり、前記魚類抽出物/生薬成分の重量比は0.15以上であり、前記飲料のpHは3.3以下であることを特徴とする、容器詰飲料。

Description
〔1〕生薬成分、酸味料、及び魚類抽出物を含む飲料組成物が充填された容器詰飲料であって、前記生薬成分は、杜仲葉抽出物、又は杜仲葉抽出物及びウコギ科人参抽出物を含み、前記魚類抽出物は、魚類の魚卵、卵巣、卵巣膜及び/又は卵巣外皮からの抽出成分であり、前記魚類抽出物/生薬成分の重量比は0.15以上であり、前記飲料組成物のpHは3.3以下であることを特徴とする、容器詰飲料、
〔2〕前記魚類抽出物は、前記飲料組成物に対して0.2重量%以上含まれる、前記〔1〕に記載の容器詰飲料
〔3〕前記酸味料は、有機酸である、前記〔1〕又は〔2〕に記載の容器詰飲料、
〔4〕さらに甘味料を含む、前記〔1〕〜〔3〕の何れかに記載の容器詰飲料、
に関する。
杜仲の葉部の粉砕物と高麗人参の地下部の粉砕物を混合し、加温しつつ水溶媒にて抽出し、その後定法を用いて濃縮してBrix 50としたものを得た。その後、鮭の卵巣膜由来の魚類抽出物(株式会社日本バリアフリー製、商品名:MPCマリンプラセンタ)、杜仲葉・人参エキス、大豆イソフラボン(イソフラボン含有量10重量%)、クエン酸、スクラロース及び精製水を表1に示す組成比で配合し、飲料組成物を得た。得られた飲料組成物は、混合させた段階では全て褐色であった。得られた飲料組成物のpHを、pH測定器(東亞ディケーケー(株))で測定したところ、表1に示したような結果となった。その後これらを、50mL容の褐色壜に約50mL充填し、65℃に恒温化した温浴中に2時間浸漬して加熱処理し、表1に示すように実施例1〜13及び比較例1〜7を得た。
実施例1〜13、及び比較例1〜7の色調について確認をおこなった。
実施例4〜7、及び比較例5〜6について、熟練したパネラーに試食してもらい、味と香りについて検討をおこなった。評価基準については下記に示すとおりである。

2:やや美味しい
1:美味しくない

2:ややバランスがとれている
1:バランスがとれていない
実施例8〜12について、熟練したパネラーに試食してもらい、味について評価をおこなった。評価基準については下記の通りである。
5:酸味と甘みのバランスが非常にいい
4:酸味と甘みのバランスに問題はない
3:酸味と甘みの何れかが強い
2:甘みが強い
1:酸味が強い
実施例1〜13については褐色のままで、加熱殺菌前との比較における色調の変化は見られなかった。その一方で比較例1〜7については、加熱殺菌工程を経たことにより緑色への色調変化が確認された。ここで、実施例1〜3及び比較例1〜2の比較では、それぞれ魚類抽出物の含有率のみが異なっているが、魚類抽出物が0.2重量%以上含まれている実施例1〜3において、緑色への変色が起きていないことが確認された。そして他は同一条件で、魚類抽出物のみの含有率を変えておこなった実施例4〜7及び比較例3〜4との比較においても同様であることが確認された。
下記表2に示したように、魚類抽出物/生薬成分の重量比が0.1以下である比較例5及び6では、味及び/又は香りが芳しくないこと確認された。一方で同重量比が0.15以上である比較例5〜8においてはこれらの問題は確認されなかった。
下記表3に示したように、適度な量の甘味料を加えることにより、酸味と甘みのバランスのとれた良好な味の飲料が得られることが確認できた。特にスクラロースを甘味料に使用する場合、これを0.1〜0.5重量%加えるのが好ましく、0.2〜0.3重量%加えるのがより好ましいことが示唆された。

- 生薬成分、酸味料、及び魚類抽出物を含む飲料組成物が充填された容器詰飲料であって、
前記生薬成分は、杜仲葉抽出物、又は杜仲葉抽出物及びウコギ科人参抽出物を含み、
前記魚類抽出物は、魚類の魚卵、卵巣、卵巣膜及び/又は卵巣外皮からの抽出成分であり、
前記魚類抽出物/生薬成分の重量比は0.15以上であり、
前記飲料組成物のpHは3.3以下であることを特徴とする、
容器詰飲料。 - 前記魚類抽出物は、前記飲料組成物に対して0.2重量%以上含まれる、請求項1に記載の容器詰飲料。
- 前記酸味料は、有機酸である、請求項1又は2に記載の容器詰飲料。
- さらに甘味料を含む、請求項1〜3の何れかに記載の容器詰飲料。
