ここでのテストにおいて、調理の対象とする食品mには、スライスした食パンを用いた。食パンのスライスされた両面が上下を向くように、載置部20に載置した。
テスト1〜4(実施例)は、上記本願発明に係る装置を用いて行った。このテスト1〜4に用いた装置は、熱源として、1本が26000kcal/h(時間)の発熱管を2本用いた。このテスト1〜4に用いた装置の調理室の調理区間の長さ(食品の移動方向の長さ)を2000mmとした。また、このテスト1〜4において、載置部20の上に置かれた食品mについて、当該食品mの下面と蒸気導入部11(の最上部)との間隔を5cmとした。また当該食品mの上面と熱交換部5(の最下部)との間隔を5cmとした。上記ファン14の夫々について、熱交換部5表面(輻射部50)との上記間隔aを3cmとし、上記間隔bを2cmとした。
テスト5(比較例)は、テスト1〜4との比較を行うために、特別に設定した調理装置を用意した。このテスト5に用いた装置は、熱源に、1本60000kcal/hの発熱管を2本用いた。このテスト5に用いた装置の調理室の調理区間の長さ(食品の移動方向の長さ)を1650mmとした。上記の本願発明に係る調理装置は、過熱蒸気を食品の下方でのみ発生させ、食品の上方においては、過熱蒸気ではなく、下方で過熱蒸気を発生させた際に生じた排気を利用して加熱を行うものであった。一方、このテスト5で用いた調理装置は、食品の上方と下方の双方について、過熱蒸気を用いて加熱を行う従来品であり、ファン14に想到する構成を持たない。また、このテスト5で用いた装置は、従来機を細工して、下方からの過熱水蒸気は、遮断(強制的にoff)した(従来機においては、このような設定を行うことはできない。即ちテスト5の装置は、従来機ではなく、比較機として特別に仕立てたものである)。尚テスト5で用いた装置では、食品の上面と過熱蒸気の噴出し口との間隔を5cmとした。
上記の本願発明に係る装置及び比較機を用いて、焼いたスライスした食パンの上面と下面とについて、焼色の濃さを目視により、暗色(焦げ茶色)、濃色(濃いキツネ色)、中間色(キツネ色)、淡色(薄いキツネ色)、白色の、5段階で評価した。

上記の結果から、テスト5では、パンの上面と下面とでは、パン表面の焼き色が濃食と淡色と、その焼加減の差が大きい、即ち焼ムラの大きな結果となった。また、本願発明に係る装置を用いたテスト1は、ファン14を回転させないで行ったものであるが、パンの上面と仮面とは、何れも淡色であり、その焼加減の差は見られなかった。また、テスト2は、パン上面とパン下面とは、夫々中間色と淡色であり、焼き加減に大きな差は見られなかった。テスト3についても、パン上面とパン下面とは、濃色と中間色と、焼き加減に大きな差は見られなかった。更に、テスト4についても、パン上面とパン下面とは、夫々中間色と淡色であり、焼き加減に大きな差は見られなかった。
ファン14の回転数が、テスト2,4に比べて大きかったテスト3では、パン上下共に、テスト2,4のパンよりも良く焼けていた。但し、テスト3において、テスト5のパン上面のように、焦げる(暗色)ものではなかった。テスト2,4は、焼き時間の長さ以外条件は同じである。テスト2,4の何れも、上記の通り、パンの上下の面は、中間色と淡色と、良好な結果を呈している。
以上のことから、ファンを回転させたほうが、焼き加減について、よく焼けているといえる。また、焼きムラについても、本願発明に係る装置は、パン上下の差は小さく、問題ないものであることが分かる。
