本発明は主としてフラワーペースト、カスタードプリンおよび蜂蜜などの流動性を有する飲食物を加熱する飲食物の加熱装置に関する。

【発明が解決しようとする課題】
流動性を有する飲食物には、特定の温度まで加熱すると温度の変化に対する粘度の変化が直線的とはならず、急激に変化する変性状態が発生するものがある。この変性状態となる温度は変性温度とも言われる。たとえば、フラワーペーストつまり小麦粉、澱粉若しくはその加工品や果汁などを主原料として砂糖や油脂などを加えてペース状にした食品は、温度が高くなると粘度が高くなるが、特定の温度つまり変性温度となると急激に粘度が高くなるという性質を有している。この性質はフラワーペーストのみならずカスタードプリンなどのように澱粉類が含まれる飲食物に共通しており、各飲食物によって粘性が変化する変性温度は相違しているが、たとえば、フラワーペーストやカスタードプリンは、60〜90℃の温度で急激に粘性が高くなる。これに対して、蜂蜜のように、50℃程度の温度にまで加熱すると、急激に粘性が低くなるものもある。

このような飲食物は変性温度にまで加熱すると粘性そして導電率が急激に変化して物性が変化する性質を有しており、フラワーペーストのように変性温度で粘度が高くなる性質を有する飲食物をジュール熱を利用して加熱する場合には、飲食物が変性温度付近にまで加熱される際に、粘性の高い部分と低い部分とが混在することになる。粘度が高い部分と低い部分とが混在するようになると、粘性が高い部分がパイプの内周面に滞留し、粘度が低い部分が滞留した部分をすり抜けて流れることがあり、その場合にはパイプの中心部に粘度が低い部分が集まって大きな流速で流れることになる中抜け現象が発生することになる。パイプの内周面に粘度の高い部分が滞留すると、滞留した部分は長時間通電されることになり、中心部を流れる部分と内周面に滞留する部分とで温度が相違し、飲食物全体が均一に加熱されなくなる。特にジュール熱により飲食物を加熱する場合には、滞留した部分の通電時間が長くなると、滞留した部分は設定した温度以上の温度に過加熱されることになる。
