本発明は、袋詰液状食品等の冷却に用いられる氷水冷却機に係り、詳しくは、予備冷却運転等の自動化や消費エネルギの低減等を図る技術に関する。

スープやシチュー等の液状食品は、その鮮度を保ちながら雑菌の繁殖等を抑えるため、加熱調理を行った後に迅速に冷却し、0℃程度でいわゆる氷温保存することが望ましい。近年、このような目的に適合する装置として、種々の氷水冷却機が開発・生産され、比較的小規模な食品製造所等で稼働している。氷水冷却機は、冷却水を貯留する冷却水槽と、この冷却水槽に供給される氷片を製造する製氷機(通常は、オーガ式の製氷機)と、冷却水槽内の冷却水を攪拌する攪拌ポンプ等から構成されており、その運転時には、冷却水槽内で冷却水の温度が0℃に保持され、更に冷却水面に所定量の氷が浮かんだ状態となる。通常、加熱調理機(ケトル)内で加熱調理された液状食品は、袋詰機によりビニール袋等に充填・封入されて食品パックとなった後、氷水冷却機の冷却水槽に投入・冷却されて、多くの場合は販売時等まで冷却水槽内で保存される。

【発明が解決しようとする課題】
上述した氷水冷却機では、装置起動直後に食品の投入が行えない他、運転時の電力消費が大きい等の問題があった。

例えば、食品パックの投入は冷却水温が0℃に低下した後に行われることが望ましいが、冷却水槽の容量が一般に大きいことから、これには製氷機から供給された大量の氷が溶融することが必要となる。そのため、氷水冷却機は、加熱調理機や袋詰機の運転開始に先だって所定時間(例えば、90〜120分)の予備冷却運転を行わねばならず、氷水冷却機のオペレータに負担を強いる。また、オペレータが予備冷却運転を失念した場合、冷却水温が所定温度に低下するまで、加熱調理作業が一時的に行えなくなる事態が生じる。

一方、氷水冷却機では、予備冷却運転中に冷却水槽内の冷却水温を均一にしたり、製氷機から供給された氷片が団塊となることを防止するため、攪拌ポンプにより冷却水を攪拌する必要がある。また、食品パックが投入された際には、その冷却を迅速に行わせるべく、やはり攪拌ポンプにより冷却水を攪拌する必要がある。しかしながら、予備冷却運転中における攪拌は、冷却水温が高いときには氷片の融解速度が速いためにその必要がなく、冷却水温が低下しても比較的緩やかに行えばよい。これに対し、食品パック投入時における攪拌は、食品パックの単位時間当たりの投入量によるが、強い水流を食品パックの周囲に形成するものでなければならない。ところが、従来の氷水冷却機では、装置起動後に攪拌ポンプが一定速度で運転されるため、予備冷却運転中には不要あるいは過剰な攪拌が行われることになり、電力消費が徒に大きくなる。
