して、鍋蓋に巡らし小さな穴３から煮こぼれがおこるよ
うにする。煮こぼれた煮汁は鍋底の方へ向かってくぼみ
を与えられた鍋蓋１に溜められ、ツマミ２を持って溜ま
った煮汁を放る。
