The

A signal is input to the
When the cooked rice is stored in a freezer, if normal cooked rice is frozen as it is, the whole is frozen as one mass. Therefore, when the frozen boiled rice is reheated and eaten, the temperature of the central part of the lump is difficult to rise, and uneven heating tends to occur. In addition, since it is difficult to divide a lump of frozen boiled rice, it is inconvenient when it is desired to take out and use only a part of the frozen-preserved boiled rice.
With respect to such a problem, the method for producing frozen cooked rice according to the present embodiment makes it possible to easily produce frozen cooked rice in a state in which rice grains do not adhere to each other and are easily separated. In the following description, a state in which rice grains are easily separated from each other without adhering to each other may be referred to as "a state in which rice grains can be subdivided."
The method for producing frozen cooked rice according to the present embodiment includes a cooked rice refrigerating step of maintaining the temperature of the cooked rice in a cooked rice refrigerating temperature range equal to or higher than the freezing point of the cooked rice, a cooked rice loosening step of loosening the refrigerated cooked rice in the cooked rice refrigerating step, and the cooked rice. and a cooked rice freezing step of freezing the cooked rice after the loosening step. The cooked rice refrigeration step is a step in which the cooked rice is maintained at a low temperature without freezing to promote the rearrangement of the gelatinized starch and reduce the adhesion between the rice grains. When the cooked rice is refrigerated, the gelatinized starch of the cooked rice is rearranged. Rearrangement is a phenomenon that when gelatinized starch is placed at a low temperature, starch molecules are rearranged and become regular, and is also called "aging". When the gelatinized starch of cooked rice is rearranged, the stickiness of the cooked rice decreases and the hardness of the cooked rice increases. For this reason, the cooked rice that has undergone the cooked rice refrigeration process has a reduced adhesive force between the rice grains, making it easier for the rice grains to separate from each other.
By performing the cooked rice loosening process on the cooked rice that has undergone the cooked rice refrigeration process, the rice grains that have been in contact can be separated from each other. As a method of loosening the cooked rice in the step of loosening the cooked rice, for example, the cooked rice may be stirred using a rice scoop or the like, the cooked rice may be spread out, or the cooked rice may be vibrated. may In the process of loosening cooked rice, while the rice grains that have been in contact are separated, there is a possibility that the rice grains will newly come into contact with each other. Even if the rice grains newly come into contact with each other, the stickiness of the cooked rice is reduced and the hardness is increased by the refrigeration process, so the rice grains are less likely to stick to each other. Therefore, by performing the cooked rice loosening step, it is possible to reliably reduce the average adhesive force between rice grains in the cooked rice as a whole.
The cooked rice freezing step is a step of freezing and preserving the cooked rice in a state where the rice grains are separated from each other. The cooked rice that has been loosened in the rice loosening process has a lower average adhesive force between rice grains than the cooked rice that has been loosened in the cooked rice loosening process. Therefore, by performing the cooked rice freezing step after the cooked rice loosening step, it is possible to obtain frozen cooked rice in a state where the rice grains are easily loosened and can be subdivided. Such frozen boiled rice can be heated in a state where the rice grains are separated from each other when the frozen cooked rice is reheated in a microwave oven, for example, so that uneven heating can be reliably suppressed. In addition, when only a part of the stored frozen cooked rice is desired to be used, only the amount to be used can be easily taken out, which is highly convenient. In addition, when the frozen cooked rice is reheated, the starch is gelatinized again, thereby restoring the stickiness of the cooked rice and reducing its hardness. This makes it possible to obtain cooked rice with excellent taste.

As shown in FIG. 5, in the present embodiment, the

In the present embodiment, after the cooked rice refrigeration process is completed, the user manually performs the cooked rice loosening process for loosening the cooked rice. The loosening waiting step after the cooked rice refrigeration step corresponds to the second step for the user to loosen the boiled rice that has been chilled in the first step.
After the cooked rice is loosened in the second step, the
The set temperature of the

The
In the loosening waiting process, the

The example shown in FIG. 5 shows that the boiled rice loosened by the user is returned to the
At time TS when the second time ΔTS has elapsed since the loosening waiting process started, the
When the cooked rice freezing process starts, the temperature of the cooked rice drops and reaches the freezing point θf. After that, the temperature of the cooked rice becomes lower than the freezing point θf. Cooked rice that has been rapidly cooled to a temperature lower than the freezing point θf is temporarily supercooled. A supercooled state is a state in which the material does not freeze at a temperature lower than the freezing point θf. Since the supercooled state is an unstable state, it is quickly resolved. After passing through this supercooling state, the cooked rice begins to freeze. Eventually, ice crystals are generated over the entire cooked rice, and the freezing of the entire cooked rice is completed.
In the present embodiment, in the cooked rice freezing step, the cooked rice is completely frozen while the rice grains are still separated from each other. The temperature of the cooked rice after freezing is maintained at a temperature equal to the frozen storage temperature θF.
FIG. 6 is a diagram showing an example of the relationship between the stickiness of cooked rice and the refrigeration maintenance time in which the temperature of cooked rice is maintained in the cooked rice refrigeration temperature range. The vertical axis in FIG. 6 indicates the ratio of stickiness when freshly cooked, that is, when the refrigeration maintenance time is 0 hours, as 100%. The stickiness of cooked rice represents the adhesion between rice grains and is an index of how easily the rice grains are separated from each other. Experimental results confirmed that the longer the refrigeration time, the less sticky the rice, and the easier it was for the rice grains to separate from each other. In the refrigerated temperature zone of cooked rice, the rearrangement of gelatinized starch progresses and the stickiness decreases. When the stickiness has decreased, the rice grains can be easily separated from each other by applying an external force to the cooked rice, such as loosening the cooked rice by hand.
In the cooked rice refrigeration step, the first time ΔTR corresponding to the time for maintaining the temperature of the cooked rice in the cooked rice refrigeration temperature range is preferably 6 hours or longer, more preferably 24 hours or longer. . By maintaining the temperature of the cooked rice in the cooked rice refrigeration temperature range for such a period of time, the rearrangement of the gelatinized starch can be more reliably advanced, and the ease of separation of the rice grains can be more reliably improved. Also, the first time ΔTR is preferably a time within 48 hours.
As long as the boiled rice is not frozen, the rearrangement of gelatinized starch proceeds faster at lower temperatures, and proceeds fastest at around 0°C. Therefore, it is preferable to maintain the temperature of the cooked rice at 10°C or lower in the cooked rice refrigeration step. This is advantageous in promoting rapid rearrangement of gelatinized starch. From this point of view, the
In the cooked rice freezing step, it is desirable to freeze the cooked rice at a temperature of -20°C or more and less than 0°C. From this point of view, the
In addition, the
For long-term storage such as one month, the frozen storage temperature θF is desirably low, for example, from -20°C to less than -10°C. On the other hand, if the storage period is about two weeks, the frozen storage temperature θF is considered to be from -10°C to less than 0°C. The
FIG. 7 is a diagram showing the appearance of frozen cooked rice obtained by the method for producing frozen cooked rice according to the present embodiment. FIG. 7(a) shows a state in which frozen boiled rice is contained in a plastic bag. FIG. 7(b) shows a state in which the frozen cooked rice is scooped up with a spoon. As shown in FIG. 7, in the present embodiment, the rice grains are frozen and stored in a state in which they are separated from each other, and the rice grains are not attached to each other. can be drained from Therefore, the user does not need to subdivide the cooked rice in advance before freezing it, and can take out the desired amount from the
If the cooked rice is not subjected to the cooked rice refrigeration process, the adhesion between the rice grains does not decrease, and the rice grains cannot be separated from each other, so that they cannot be separated. According to the present embodiment, the cooked rice loosening step is performed after the stickiness of the rice grains is reduced by the cooked rice refrigeration step, so that the rice grains can be reliably separated from each other. By performing the cooked rice freezing step after the cooked rice loosening step, the rice grains can be stored for a long period of time while maintaining the separated state. In addition, freezing can prevent the rearrangement of the gelatinized starch from progressing, and can be preserved while maintaining the deliciousness.
FIG. 8 is a control flow chart showing an example of the operation of the
In the cooked rice refrigerating process, the
The
The
In the following description, the number of rice grains that are in contact with one rice grain will be referred to as the "rice grain contact number", and the total area of one rice grain that is in contact with other rice grains will be referred to as the "rice grain contact area." . In addition, for a plurality of rice grains contained in cooked rice, the average value obtained by arithmetically averaging the number of rice grains in contact is referred to as "average number of rice grains in contact", and the average value obtained by arithmetically averaging the rice grain contact areas is referred to as "average rice grain contact area". In the present embodiment, at least one of the average rice grain contact number and the average rice grain contact area after the cooked rice loosening process is reduced compared to at least one of the average rice grain contact number and the average rice grain contact area before the cooked rice loosening process. First, it is desirable to perform the cooked rice loosening step. By doing so, it is possible to freeze the rice grains in a more reliably separated state.

Next, the second embodiment will be described with reference to FIGS. 9 to 13. The description will focus on the differences from the first embodiment described above. The same reference numerals are used to simplify or omit redundant description. 9 and 10 are enlarged cross-sectional views around
As shown in FIGS. 9 and 10 , the

In this embodiment, the

FIG. 12 shows the set temperature of the
In the present embodiment, the
The set temperatures of the switching
At time TR when the first time ΔTR has elapsed since the cooked rice refrigerating step was started, the

When the cooked rice refrigerating process ends, the
As described above, according to the present embodiment, the cooked rice loosening process can be automatically executed, so that the user does not need to manually loosen the cooked rice, further improving convenience.
The
As shown in FIGS. 9 and 10, the
The cooked rice loosening means according to the present disclosure is not limited to a configuration like the
