以下の試験例において、冷菓材料は、表1に示すアイス原料ミックス(配合A)の凍結物とした。表2に示す製造条件を用いた。冷菓本体2の平面形状は略楕円形とした。

(試験例1)
配合Aの原料を、混合溶解し、加熱殺菌し、均質化し、2〜6℃に温度調節して連続式フリーザーに連続的に供給した。連続式フリーザーから排出される部分凍結品を、押出ノズル11に連続的に供給した。部分凍結品の排出温度(ノズルへの供給温度)は、設定値−5.5℃、実測値−5.3〜−5.7℃であった。連続式フリーザーから排出される部分凍結品のオーバーラン(設定値)は0%とした。
押出ノズル11の排出部11dから排出される未硬化物を、排出方向に垂直に切断した。切断する直前の未硬化物にスティック3を刺した。これによりトレイ30上に成形物22を得た。成形速度(1分間に得られる成形物の数)は160個/分とした。
得られた成形物22を、硬化工程で−42〜−35℃に26〜27分間保持して硬化させた。この後、スティック3を把持して持ち上げる装置によってトレイ30から引き剥がし、アイスバー状の冷菓1を得た。

冷菓の製造中、第1のエアノズル13及び第2のエアノズル14から押出ノズル11の外面に、15〜16℃の空気を吹き付けた。これにより、第1のエアノズル13の近傍には、押出ノズル11の外面温度が0〜(T1)℃の範囲内で連続している領域が形成され、第2のエアノズル14の近傍には、押出ノズル11の外面温度が0〜(T2)℃の範囲内で連続している領域が形成された。
表3に示すように、押出ノズル11の外面に吹き付ける空気の流速、又は押出ノズルの外面とエアノズル本体との距離を調整することによって、押出ノズル11の外面温度条件(外面温度が0〜18℃である領域の割合H)を変化させて冷菓を製造した。表3に、第1、第2のエアノズル近傍の領域におけるぞれぞれの最高温度(前記T1、T2)を示す。いずれの条件においても、押出ノズル11の外面温度の最低温度は−5.0℃であった。
各外面温度条件(H)で得られた冷菓について、上記の方法でZmin/Zmax及びYmin/Ymaxを測定し、形状安定性を評価した。結果を表4、5に示す。
上記の方法で、各外面温度条件における未硬化物(アイス原料ミックスの部分凍結品)の温度tを測定したところ−5.7〜−5.1℃の範囲内であった。
表中の「エアーなし」では、第1のエアノズル13及び第2のエアノズル14からの気体の吹き付けをしないで冷菓を製造した。この場合の押出ノズル11の外面温度の最低温度は−5.7℃、最高温度Tは−5.0℃であった。

表6、7に示すように、押出ノズル11の外面温度条件(H)を変化させて冷菓を製造した。得られた冷菓について同様に評価した。結果を表6、7に示す。
