下記表2のとおり、1−1の原材料に小麦グルテンを添加した配合にて、製造検討を行った。なお、以下の小麦グルテンを添加したすべての実施例において、小麦グルテン製剤として「A−グルSS」(グリコ栄養食品製、乾物としてタンパク質76.7%含有)を使用した。表2に記載の原材料を使用して、1.に記載の方法で焼成済スポンジ生地を得た。得られたスポンジは、くちゃつくような食感であり、望ましい食感とは程遠いものであった。1−2の原材料名及びその重量%は、油脂14.2、豆乳20.0、水19.0、砂糖17.4、薄力粉20.9、小麦グルテン3.1、架橋澱粉4.0、ベーキングパウダー1.0、増粘安定剤0.40である。
1−3の製造方法 1-3 production method
下記表3のとおり、1−1の原材料にHPMCを添加した配合にて、製造検討を行った。なお、以下のすべての実施例において、HPMC製剤として「Unet ホイップアップ」(ユニテックフーズ製、HPMCを50重量%含有。HPMC以外に、アルギン酸エステルやキサンタンガム等の増粘多糖類を含有)を使用した。これらの原材料中、油性の原材料(油脂等)を適量採ってミキシングボールに投入し、これにUnet ホイップアップを加え、自動ミキサー(ケンミックス・メタリックKM−800)により混合・分散させた。次に残りの液性の原材料をミキシングボールに投入し、さらに撹拌することで起泡させた。途中でミキシングを止め、粉類(薄力粉、砂糖等)を投入しミキシングを行ってキメを揃えた。このスポンジ生地を1−1に記載の方法で焼成し、焼成済スポンジ生地を得た。得られたスポンジは、ロールケーキ形状に巻き上げるには、脆く、柔軟性にも欠け、実際に巻き上げるとひびや割れを生じた。1−3の原材料名及びその重量%は、油脂14.2、豆乳25.0、水15.0、砂糖17.0、薄力粉21.0、HPMC0.55、架橋澱粉5.7、ベーキングパウダー1.0、増粘安定剤0.55である。

下記表4のとおり、1−1の原材料に、小麦グルテン及びHPMCを添加した配合にて、製造検討を行った結果、1−3に記載の方法で焼成済スポンジ生地を得た。得られたスポンジは、ソフトで良好な食感でロールケーキ用スポンジとして求められる品位を満足するものであった。また、ロールケーキ形状に巻き上げた際も、ひびや割れを生じず、成形性にも優れたものであった。このスポンジ生地を、紙を敷いた6取天板(35cm×50cm)への充填量は約800g、焼成後の厚みは8〜10mmであった。1−4の原材料名及びその重量%は、油脂13.3、豆乳25.0、水15.9、砂糖17.4、薄力粉20.2、HPMC0.55、小麦グルテン2.3、架橋澱粉3.7、ベーキングパウダー1.0、増粘安定剤0.65である。

1−4の原材料から、HPMC量は変えず、小麦グルテン量を減らした、下記表5のとおりの1−5、下記表6のとおりの1−6の配合にて、スポンジ生地を製造し、それぞれ前記1−3に記載の方法で焼成済スポンジ生地を得た。1−5の配合により得られたスポンジは、ソフトな食感で品位に問題はなかった。また、ロールケーキ形状に巻き上げた際、やや脆さが見られたものの、成形性にも問題はなかった。これに対し、1−6の配合により得られたスポンジは、脆く、柔軟性にも欠け、ロールケーキ形状に巻き上げるとひびや割れを生じた。1−5の原材料名及びその重量%は、油脂13.3、豆乳25.0、水16.5、砂糖17.4、薄力粉20.4、HPMC0.55、小麦グルテン1.5、架橋澱粉3.7、ベーキングパウダー1.0、増粘安定剤0.65である。1−6の原材料名及びその重量%は、油脂13.3、豆乳25.0、水16.9、砂糖17.4、薄力粉20.7、HPMC0.55、小麦グルテン0.8、架橋澱粉3.7、ベーキングパウダー1.0、増粘安定剤0.65である。

表12のとおり、前記1−1、1−4、1−6の製造方法にて製造された焼成済スポンジを用いて製造されたロールケーキ、及び、その比較例として乳、卵を使用したロールケーキを示す。前記1−4で得られたスポンジは、気泡がしっかりとたち、ソフトで良好な食感で、ロールケーキ用スポンジとして求められる品位を満足するものであった。また、ロールケーキ形状に巻き上げた際も、ひびや割れを生じず、成形性にも優れたものであった。対して、1−1は、気泡がぎゅっと詰まりキメが見えず、1−6の配合により得られたスポンジは、脆く、柔軟性にも欠け、ロールケーキ形状に巻き上げるとひびや割れを生じた。
