この黄色の着色の有無によって生じる遮光率の差と、葡萄果実の糖度の関係について考えると、その正確なメカニズムは明らかではないが、葡萄果実の下部側に比べて太陽光線が過度に当たりやすい葡萄果実の上部側に関しては、黄色に着色して遮光率を上げることで太陽光線を適度に抑制して糖度の低下を防止できるのではないか、と推察できる。また、葡萄果実の上部側に比べて太陽光線の影響が少ない葡萄果実の下部側に関しては、白色にすることで太陽光線が十分に当たるようになって糖度が向上するのではないかと、推察できる。更にフーリエ変換赤外分光光度計(FTIR)分析を行ったところ、この黄色の着色部分は白色部分よりも赤外線の透過率が高いことが分かり、分光光度計による測定を行ったところ、約350nm〜550nmに高い吸光度がみられた。このことから特異的な波長域の光の透過が葡萄果実の糖度向上に関与している可能性も示唆される。なお、実際の理由が仮に上記した推察によるものでない場合も、本実施例の技術的効果が否定されるものではない。   Considering the relationship between the difference in shading rate caused by the presence or absence of yellow coloring and the sugar content of persimmon fruits, the exact mechanism is not clear, but the persimmon fruits are more susceptible to sunlight than the lower side of persimmon fruits.
