このような状態になったパン生地を用いてパンを製造しても、ふっくら感に乏しく、ボリュームの出ないパンになり易く、パンの老化も早くなる。又、パン表面には梨肌が出現してくるなどの障害が顕著に出てきてしまう。
そこで、従来より冷凍パン生地の改善方法として配合等によって改善していく方法と、製法等によって改善していく方法の主に2つの方法が提案されている。
配合によって改善していく方法として、パン生地への水の配合量の減量、イーストフードの増量が広く知られているが、近年は他の方法も提案されている。特許文献1では油脂、保湿剤、乳化剤を含有するパン用冷凍生地が紹介されている。又、特許文献2ではα化デンプンと糖アルコールを含有することを特徴とするパン類の冷凍生地が提案されている。そして、特許文献3では超強力粉含有粉と冷凍耐性イーストを用いることを特徴とする冷凍生地製パン法が提案されている。
製法によって改善していく方法として、特許文献4では中種製法が提案されており、イーストの使い方を工夫するものであった。
しかしながら、これらの提案においては、何れも冷凍の保存性と得られたパン類の風味の両方を兼ね備えるものとしては充分ではなかった。

実施例2(本発明のメロンパンの調製)
液種製法による成型冷凍製造の常法に従い、実験例1の含気組成物を加えたメロンパンを製造した。
1.パン生地配合割合は表3に示した。
2.製造条件
ミキシング: 強力粉95部、液種12部、砂糖15.2部、食塩1部、脱脂粉乳3部、卵15部、イーストフード0.3部、生イースト6部、水28部、含気組成物を加えてスパイラルミキサーで低速5分、高速12分ミキシングを行い、油脂15部を添加後、低速5分、高速8分ミキシングを行った。
発酵: ノータイムでADラインに搬送し、常法に従ってメロンパンの成型を行い速やかに凍結させた。
凍結保存温度及び期間: −20℃にて1週間、並びに2週間の凍結保存させた。
1週間、並びに2週間凍結保存後、天板に成型した生地を並べ、解凍を行った。
解凍温度、時間:室温(22℃空調) 150分
ホイロ温度、湿度、時間:35℃ 70% 60分
焼成温度、時間:200℃ 15分焼成をしメロンパンを調製した。
