本発明は、食品加熱装置及び食品加熱方法に関し、更に詳しくは、短時間で効率良く様々な種類の食品を好適に加熱することができる食品加熱装置及び食品加熱方法に関する。
本発明は、給食や弁当等に用いられる大量の食品の加熱及びこれに関連する分野に広く使用される。

【従来の技術】
従来より、食品加熱装置として、例えば、多数の食品(例えば、冷凍ハンバーグ等)が載置されるトレー等を搬送する搬送コンベアと、この搬送コンベアの途中に設けられる加熱室と、この加熱室内にガスバーナで生成した熱風を噴射させる加熱手段とを備え、搬送コンベアにより搬送されるトレー上の食品を加熱室で熱風により加熱して食品を焼き上げるものが一般的に知られている。

【発明が解決しようとする課題】
しかし、上記従来の食品加熱装置では、加熱室に搬送コンベア及びトレーを通すための搬送口が形成されており、この搬送口を開放した状態で食品を加熱しているので、加熱時の熱風が上記搬送口を介して加熱室の外側に逃げてしまい、加熱効率が極めて悪いものであった。また、上記搬送口を介して、熱風と共に加熱により発生する油分等が周囲に飛散してしまい、周囲の作業環境を悪化させてしまうため、頻繁に清掃を行う必要があった。
また、上記従来の食品加熱装置では、熱風をトレー上の食品に強制的に噴射させて食品を加熱しているので、比較的短時間でムラ無く芯まで加熱することが困難であった。また、加熱調理された食品は、水分が不足してパサパサした状態となりがちであった。さらに、食品の表面に好適な焦げ目を付けて焼き上げたい場合、加熱室で食品を熱風により加熱した後、その加熱室から搬出された食品をガスバーナ等により焦げ目を付ける工程を必要としていた。

以上より、本発明は、上記現状に鑑みてなされたものであり、短時間で効率良く様々な種類の食品を好適に加熱することができる食品加熱装置及び食品加熱方法を提供することを目的とする。

本発明の食品加熱装置は、食品が載置される容器を搬送する搬送手段と、該搬送手段により搬送される前記容器の前記食品を密閉状態とする密閉手段と、該密閉手段により密閉状態とされる前記食品を加熱する加熱手段とを備えることを特徴とする。

上記「食品」は、加熱(例えば、焼く、煮る、蒸す、ゆでる、揚げる等の加熱調理、解凍処理、乾燥処理等)されるものである限り、その種類、形状、個数等は特に問わない。上記食品としては、例えば、給食や弁当等で用いられる魚類(魚の切身等)、肉類(カルビ、鳥もも肉等)、野菜類(にんじん、ジャガイモ等)、加工済み食品(コロッケ、餃子等)、冷凍食品(冷凍ハンバーグ、冷凍オムレツ等)などを挙げることができる。

上記「容器」は、食品が載置され得る限り、その形状、材質、大きさ等は特に問わない。上記容器の形状としては、例えば、鍋状、皿状、トレー状、プレート状、異形状、網状等を挙げることができる。より効率良く加熱することができるといった観点から、上記容器が上方を開放した鍋であることが好ましい。この鍋は、例えば、アルミニウム製鍋の少なくとも内表面、特に底面を加熱してアルミナ層(例えば、層厚さ:25〜50μm)を形成してなるものであることができる。これにより、焼き餃子等の蒸し焼き用の鍋として使用しても、コゲ付きを抑制することができる。また、上記容器の材質としては、例えば、アルミ製、ステンレス製、鉄製等の金属製、陶磁器製等を挙げることができる。また、上記容器の板厚さが5〜15mm、更に8〜10mmであることが好ましい。

上記「搬送手段」は、容器を搬送することができる限り、その搬送形態、搬送距離等は特に問わない。上記搬送手段としては、例えば、コンベア、プッシュ・プル機構、ロボットアーム等を挙げることができる。上記コンベアとしては、例えば、チェーンコンベア、ベルトコンベア、ローラコンベア等を挙げることができる。より効率良く搬送できるといった観点から、上記搬送手段が水平方向で間欠周回するコンベアであることが好ましい。このコンベアは、例えば、上記容器を投入する投入部と、搬送される容器の食品を加熱する加熱部と、容器を回収する回収部とを有することができる。これにより、容器の搬送効率を向上させることができる。尚、より効率良く加熱するためには、上記加熱部が容器の搬送方向に沿って複数(例えば、2、3又は4個)設けられていることが好ましい。

上記「密閉手段」は、食品を密閉状態とし得る限り、その構造、大きさ、設置個数等は特に問わない。上記密閉手段は、例えば、食品と共に容器全体を密閉する手段であることができる。より簡易な構造にできるといった観点から、上記密閉手段が、後述する蓋部材及び変位手段を備え、上記容器と後述する蓋部材との協働により容器内の食品を密閉する手段であることが好ましい。尚、上記「密閉状態」とは、外気から食品を気密に隔離した状態を意味する。また、上記密閉状態としては、良好な食品の加熱を阻害しない限度において、水蒸気を逃がすための微細孔等を介して外気と食品とが連絡した状態であることも許される。
上記「蓋部材」は、容器を閉鎖することができる限り、その形状、設置形態、設置個数等は特に問わない。上記蓋部材の形状としては、例えば、皿状、トレー状、プレート状、異形状等を挙げることができる。また、上記蓋部材の材質としては、例えば、アルミニウム製、ステンレス製、鉄製等の金属製、陶磁器製等を挙げることができる。また、上記蓋部材の板厚さが1〜5mm、更に2〜3mmであることが好ましい。より効率良く加熱するためには、上記蓋部材が容器の搬送方向に沿って複数(例えば、2、3又は4個)配置されていることが好ましい。
上記「変位手段」は、上記蓋部材及び/又は上記容器を変位させて容器を閉鎖させ得る限り、その構造、変位形態等は特に問わない。

ここで、上記密閉手段をより簡易な構造にできるといった観点から、上記蓋部材が、上記搬送手段により搬送される容器と対向する位置に配置されていると共に、上記変位手段が、対向状態の上記蓋部材及び/又は上記容器を対向方向に沿って移動させることが好ましい。この場合、さらに簡易な構造にするためには、上記変位手段が、上記蓋部材と対向状態の容器を載置支持する載置部材と、この載置部材を対向方向に沿って移動させる移動機構とを有することが好ましい。この移動機構は、例えば、上記載置部材を弾性支持するための弾性部材(例えば、バネ、ゴム等)を有することができる。これにより、上記蓋部材及び容器を弾性部材の弾性変形を伴って当接させることができ、両部材に無理な負荷がかかることなく蓋部材で容器をより確実に閉鎖することができる。また、上記移動機構としては、例えば、ジャッキ機構、パンタグラフ機構、エアチューブ機構等を利用することができる。また、上記移動機構の駆動源として、例えば、モータ、シリンダ、圧空源等を採用することができる。

上記「加熱手段」は、密閉状態の食品を加熱することができる限り、その加熱形態、設置箇所、設置個数等は特に問わない。上記加熱手段の加熱形態としては、例えば、抵抗加熱、赤外線加熱、遠赤外線加熱、マイクロ波加熱、誘電加熱、熱風加熱、熱水加熱、飽和蒸気加熱、過熱蒸気加熱等のうち1種又は2種以上を組合わせてなるものを挙げることができる。より様々な食品を好適に加熱できるといった観点より、上記加熱手段が、上記過熱蒸気加熱と他の加熱(特に好ましくは、上記遠赤外線加熱)とを併用してなるものであることが好ましい。また、上記加熱手段は、例えば、上記蓋部材、上記容器、上記変位手段及びその他の固定側(例えば、支持フレーム等)などに設けられていることができる。より効率良く加熱できるといった観点から、上記加熱手段が、上記蓋部材及び上記容器に設けられていることが好ましい。
尚、より様々な種類の食品を好適に加熱できるといった観点から、上記加熱手段が、食品の密閉空間の内部に設けられ食品を直接的に加熱する手段と、食品の密閉空間の外部に設けられ食品を間接的に加熱する手段とを有することが好ましい。

【発明の効果】
本発明の食品加熱装置によれば、搬送手段により食品が載せられた容器が搬送され、密閉手段によりその搬送途中の容器内の食品が密閉状態とされ、加熱手段によりその密閉状態とされた食品が加熱される。
このように、密閉状態の食品を加熱するようにしたので、短時間で効率良く様々な種類の食品を好適に加熱することができる。また、熱エネルギーが外気にもれることを抑制でき効率良く加熱することができる。また、食品の加熱時に発生する油分等の周囲への飛散を抑制することができる。

また、前記変位手段が、前記蓋部材と対向状態の前記容器を載置支持する載置部材と、該載置部材を対向方向に沿って移動させる移動機構を有する場合は、容器が載置された載置部材を対向方向に沿って移動させれば、蓋部材で容器を閉鎖して容器内の食品を密閉状態にでき、さらに短時間で効率良く様々な種類の食品をより好適に加熱することができる。
また、前記加熱手段が、過熱蒸気により食品を加熱する場合、さらに短時間で効率良く様々な種類の食品をより好適に加熱することができる。
また、前記加熱手段が、遠赤外線により食品を加熱する場合、さらに短時間で効率良く様々な種類の食品をより好適に加熱することができる。

【発明の実施の形態】
以下、図面に基づいて実施例により本発明を詳しく説明する。尚、本実施例では、本発明に係る「容器」として、平面正方形の底部3aと、この底部3aの外周縁から斜め上方へ立上る側壁部3bと、側壁部3bの外周縁から水平方向へ延びるつば部3cとからなる鍋3(図3参照)を例示する。この鍋3の底部3aの表面にはアルミナ層が形成されているものとする。
(1)食品加熱装置の構造
本実施例に係る食品加熱装置1は、図1、2に示すように、複数の枠部材を枠組みしてなる支持フレーム2に設置される搬送コンベアAと、この搬送コンベアAにより搬送される鍋3内の食品を密閉状態とする密閉手段Bと、この密閉手段Bにより密閉状態とされた食品を加熱する加熱手段C1,C2とを基本的に備えて構成される。

上記搬送コンベアAは、支持フレーム2の長手方向の両端側に回転自在に軸支される前後一対のスプロケット5a,5bを備えている。これらスプロケット5a,5b間には、左右一対の無端状チェーン6a,6bが巻き回されている。また、一方のスプロケット5aには、伝達ベルト7を介して駆動モータ8の動力が伝達され、無端状チェーン6a,6bが搬送方向に所定の等ピッチ間隔でかつ所定時間毎に間欠周回するようになっている。また、搬送コンベアAには搬送ピッチ毎に、無端状チェーン6a,6b上に鍋3を投入する投入部30と、鍋3内の食品を加熱する複数(図中3つ)の加熱部31,32,33及び無端状チェーン6a,6b上から鍋3を回収する回収部34が順次設定されている。

上記密閉手段Bは、搬送コンベアAにより搬送される鍋3を閉鎖し得る複数(図中3個)の蓋部材10と、この蓋部材10に対して鍋3を昇降させるための変位手段11とを基本的に備えて構成される。
上記各蓋部材10は、上記複数の加熱部31,32,33に対応して搬送コンベアAにより搬送される鍋3に対向し得る位置に固定的に配置されている。また、各蓋部材10の高さは、搬送コンベアAで搬送される鍋3より所定間隔(約50mm)をもって上方に設定されている。また、各蓋部材10は、平面正方形の天部10aと、この天部10aから下方に立下がる側壁部10bと、この側壁部10bから水平方向に延びるつば部10cとからなり、上記鍋3と対応した形状となっている(図3参照)。そして、各蓋部材10のつば部10cは、上記鍋3のつば部3cと当接可能であり、この当接によって、鍋3内が外気から気密に隔離された密閉状態とされるようになっている。
尚、上記蓋部材10の天部10aには、加熱時の水蒸気を逃がすための微細孔(図示せず)が形成されている。

また、各蓋部材10の内部には、図3に示すように、密閉状態の食品を直接的に加熱するための「加熱手段」C1として、所定の間隔で並設される複数本(図中4本)の天火用熱放射管13と、主に過熱蒸気を供給するための複数個(図中2個)の供給ノズル14とが設けられている。各供給ノズル14には、温水、飽和蒸気及び過熱蒸気を生成可能なボイラ装置(図示せず)が接続されている。そして、各蓋部材10における各供給ノズル14には、適宜制御装置(図示せず)の制御により、食品の種類や加熱形態等に応じて、温水、飽和蒸気又は過熱蒸気が選択的に供給されるようになっている。また、上記各蓋部材10における各天火用熱放射管13は、食品の種類や加熱形態等に応じて、適宜制御装置により駆動制御されるようになっている。
尚、上記蓋部材10及びこれを覆うカバー部材15は、図2に仮想線で示すように、蝶番16を介して搬送方向Sに沿った軸線を中心として開閉自在とされ、上記天火用熱放射管13や供給ノズル14等の清掃・点検等を簡易に実施し得るようになっている。

上記変位手段11は、図1,2に示すように、搬送コンベアAにより搬送され蓋部材10と対向状態の鍋3を載置支持する平板状の載置部材17と、この載置部材17を対向方向に沿って昇降させる移動機構20とを基本的に備えて構成される。
上記移動機構20は、支持フレーム2を構成する下方中央枠部2aに設置される駆動モータ21を備えている。この駆動モータ21の駆動軸には、水平方向に延びる伝達軸22が直結されている。この伝達軸22の基端部及び先端部には、ギヤ機構23を介して上下方向に延びる昇降バー24が連繋されている。各昇降バー24の上端部には、矩形板材の周縁を曲折してなる昇降部材25が連結されている。この昇降部材25の長手方向の長さは、上記投入部30及び各加熱部31,32,33にわたる寸法値に設定されている。
上記載置部材17は、上記投入部30及び各加熱部31,32,33に対応して複数個(図中4個)設けられている。各載置部材17の下面側には下方に延びる複数本(本実施例では4本)の案内ロッド26が取着されている。各案内ロッド26の下部は、図3に示すように、上記昇降部材25に設けた支持孔27に遊嵌されている。また、各案内ロッド26にはコイルバネ28が挿通され、このコイルバネ28の上下端が昇降部材25及び載置部材17に当接した状態となっている。

従って、駆動モータ21の駆動によって、その動力が伝達軸22及びギヤ機構23を介して昇降バー24に伝達され、昇降バー24、昇降部材25及び載置部材17が一体的に昇降するようになっている。そして、昇降部材25が最下端に位置しているとき(図3参照)、無端状チェーン6a,6b上に載置支持された鍋3の底部3aと載置部材17との間には僅かな隙間が設定されており、搬送コンベアAにより搬送される鍋3が載置部材17と干渉しないようになっている。また、昇降部材25が最上端に位置しているとき(図4参照)、載置部材17上に載置支持された鍋3及び蓋部材10のつば部3c,10c同士が当接するようになっている。この鍋3及び蓋部材10の当接の際、コイルバネ28の圧縮変形を伴って当接され、両部材3,10に無理な負荷がかからないようになっている。

また、各載置部材17の下面側には、図3に示すように、複数本(図中6本)の加熱ヒータ29が並設されている。そして、この加熱ヒータ29の熱放射で上記載置部材17及び鍋3を加熱することによって、遠赤外線を放射してこれで食品を加熱するようになっている。従って、これら加熱ヒータ29、載置部材17及び鍋3等によって、密閉状態の食品を間接的に加熱するための「加熱手段」C2が構成されているといえる。また、各加熱ヒータ29は、上述の天火用熱放射管13と同様にして、食品の種類や加熱形態等に応じて適宜制御装置により駆動制御されるようになっている。
尚、本実施例では、上記搬送コンベアAの投入部30に、上記載置部材17及び加熱ヒータ29が設けられる一方、上記蓋部材10が設けられておらず、この投入部30では、外気に開放された状態の鍋3内の食品が予熱されることとなる。

(2)食品加熱装置の作用
次に、以上のように構成された食品加熱装置1の作用について説明する。
図1に示すように、搬送方向Sに間欠周回される搬送コンベアAの投入部30では、加熱調理前の食品を収容した鍋3が一対の無端状チェーン6a,6b上に載置支持される。そして、搬送コンベアAの間欠周回によって、無端状チェーン6a,6b上に載置支持された鍋3が加熱部31,32,33へ順次搬送された後、回収部34まで搬送される。この回収部34では、加熱調理済みの食品を収容した鍋3が無端状チェーン6a,6b上から外され回収される。このように、搬送コンベヤAの投入部30への鍋3の投入及び回収部34からの鍋3の回収は、搬送コンベアAの1ピッチの間欠周回毎に実施される。

図3に示すように、上記搬送コンベアAにより加熱部31(32,33)に搬送された直後の鍋3は、所定の上下間隔をもって蓋部材10と対向すると共に、載置部材17と僅かな隙間をもって対向する状態となる。この状態より、移動機構20の駆動によって、最下端にある昇降部材25を上昇させると、先ず、載置部材17上に鍋3が載置支持され、更なる昇降部材25の上昇により、その鍋3は無端状チェーン6a,6b上の載置支持を解除されて上昇する。そして、図4に示すように、昇降部材25が最上端まで上昇すると、鍋3及び蓋部材10のつば部3c,10c同士が当接して、鍋3内の食品が密閉状態とされる。この状態で、適宜制御装置によって加熱ヒータ29及び天火用熱放射管13の駆動制御、供給ノズル14への過熱蒸気等の供給制御等が実施され、密閉状態の食品が好適に加熱されることとなる。
その後、加熱部31(32,33)での食品の加熱が終了すると、移動機構20の駆動によって、昇降部材25と共に載置部材17及び鍋3が下降される。そして、昇降部材25が最下端まで下降される直前に、鍋3は、そのつば部3cが再び無端状チェーン6a,6b上に載置支持され、その後、搬送コンベアAにより次の工程へ搬送される。以後、上述の作用が繰返し行われることとなる。

ここで、各加熱部31,32,33での加熱形態の具体例について説明する。食品として冷凍ハンバーグを加熱調理する場合、加熱部31では、加熱ヒータ29及び天火用熱放射管13による加熱(解凍処理)が約30秒の間行われた後、供給ノズル14から過熱蒸気が約30秒の間供給される。また、加熱部32及び加熱部33では、加熱ヒータ29及び天火用熱放射管13による加熱が約120秒の間行われる。このように加熱調理されたハンバーグは、表面に適度な焦げ目が付き、ムラ無く芯まで焼き上げられていた。また、従来の熱風による加熱調理に比べ、約1/2〜3/5の時間で焼き上げることができた。
また、食品としてカルビを加熱調理する場合、各加熱部31、32、33で、加熱ヒータ29及び天火用熱放射管13による加熱が約20秒の間行われる。このように加熱調理されたカルビは、満足な水分を保ったジューシーな状態で焼き上げられていた。また、従来の熱風による加熱に比べ、約1/2の時間で焼き上げることができた。
