Abstract
The invention relates to a method for making kefir by inoculating a lacteous material with microorganisms, in which the lacteous material is first inoculated with a culture containing generally available bacterial strains of the genus Streptococcus and Lactobacillus, typical for the preperation of kefir, incubated and subsequently cooled the thus obtained kefir sour milk being subsequently inoculated with a second culture (DSM 2533) containing a strain of the yeast species Candida kefyr and a strain of the bacterial species Lactobacillus brevis. The named cultures are prepared by seprately inoculating lacteous breeding substrates with the individual cultures followed by incubation.
