Abstract

The present invention relates to an oil or fat composition for aiding ingestion for persons having difficulty swallowing and chewing that is obtained by rapid cooling and kneading a composition that has an SFC value of 3% to 18% over a temperature range of 5°C to 25°C and contains oil, an oil or fat composition for aiding ingestion for persons having difficulty swallowing and chewing in a container, comprising filling the oil or fat composition for aiding ingestion for persons having difficulty swallowing and chewing into a flexible container, a food for persons having difficulty swallowing and chewing, comprising the oil or fat composition for aiding ingestion for persons having difficulty swallowing and chewing and finely cut pieces or crushed particles of an ingestible food, and a production method of a food for persons having difficulty swallowing and chewing comprising mixing an oil or fat composition for aiding ingestion for persons having difficulty swallowing and chewing, obtained by rapid cooling and kneading a composition having an SFC value of 3% to 18% over a temperature range of 5°C to 25°C and containing oil, with finely cut pieces or crushed particles of an ingestible food. According to the present invention, an oil or fat composition for aiding ingestion for persons having difficulty swallowing and chewing of the present invention that makes it possible to easily produce a food that can be easily ingested by persons having difficulty swallowing and chewing, and a food for persons having difficulty swallowing and chewing that uses that composition, can be provided.
