Abstract

A protein product based upon digestable proteins comprises protein modified with 0.3 to 20 mMol aldehyde per 100g. protein may be prepared by the reaction of the protein in heterogeneous phase with the aldehyde in a moist state or in aqueous dispersion, drying at an elevated temperature and, optionally, comminuting the product.
