Abstract

The ingredients of a bread dough are initially mixed under conditions of gentle agitation, the resulting homogenous mixture immediately enclosed in an enclosed mixing space the volume of which is such that the mixture completely fills it, the mixing completed by vigorous agitation, and the dough divided, all the operations being carried out in continuous succession without intervening fermentation period. In a modification the volume of the mixing space may be slightly greater than that of the dough so that a controlled amount of air is entrained. The process may be carried out in an otherwise conventional dough-mixing apparatus having a pressure plate to compress the dough (see Division B1). The ingredients comprising a yeast brew (which may be pre-fermented to reduce the amount of yeast required), buffering agent, flour, shortening and oxidiser are incorporated for about 30 seconds at a speed less than 100 r.p.m., the pressure plate brought down and mixing continued at a speed of at least 100 r.p.m. for 2-3 minutes. The preferred pressure range is 0-20 p.s.i. The dough is then divided, proofed in tins for 35-60 minutes and baked.
