Abstract

Gluten is extracted from dough formed of dry-milled endosperm of wheat and water by using an apparatus which comprises a container in which are at least two cylindrical rolls, the surfaces whereof are shaped to form a spiral scroll, with each adjacent roll having its spiral pitched in the opposite hand, means for supplying water or wash liquor to the container and means for driving the adjacent rolls in opposite directions with their spiral scrolls in close mesh, so that the dough is squeezed between them and distorted thereby presenting a constantly changing surface to the water or wash liquor. Soluble constituents of the dough are removed by the wash liquor leaving hydrated gluten as a cohesive mass which can be separated by sieving.
