Abstract

The invention comprises 5-propionoxymethylfurfural. The novel compound may be prepared by heating 5-hydroxymethylfurfural with propionic anhydride alone, or with propionic acid in the presence of a strong acid catalyst such as sulphuric acid, toluenesulphonic acid or boron trifluoride. The novel compound may also be obtained by heating D-fructose with propionic anhydride and propionic acid. In each case, the product is recovered by extraction of the reaction mixture with an organic solvent such as ether. Detailed examples are given.
