Abstract
887,403. Star-shaped cereal products. GENERAL MILLS Inc. Aug. 19, 1960 [Sept. 8, 1959], No. 28859/60. Class 58. [Also in Group V] In preparing a star-shaped cereal product, an extrudable dough is produced, the dough is extruded into the form of a strand having a central portion with connecting radiallyextending arms of substantially uniform width throughout, Fig. 7, the strand is sliced into thin wafers e.g. of about 0À04 inch thickness and the wafers are puffed to form the product, Fig. 8. The extrusion of the dough may be controlled by maintaining its central portion at the point of formation in the form of an annulus having a transverse dimension approximately equal to the width of the arms, Figs. 5 and 6, by the provision of a pin 38, Fig. 1 (not shown), in the extrusion apparatus (see Group V). The wafers may be puffed by subjecting them to radiant heat, frying in fat or vacuum. The cereal product may be coloured, or dusted or coated with flavouring substances such as salt, sugar, cocoa and spices. A recipe for an extrudable dough is given.
