Abstract

In order to prolong the storage life at ordinary temperatures of raw peeled potatoes, the potatoes in whole, sliced or chipped form are treated with sulphur dioxide and are placed in containers, air is removed from the containers and the containers are sealed, and the sealed containers are heated without substantial cooking of the potato, e.g. are heated at 80-85 DEG C. for at least one hour. The peeled potatoes are preferably blanched by steam or hot water before the sulphur dioxide treatment, which may be carried out by immersion of the potatoes in aqueous alkali metal sulphite or metabisulphite to provide a residual sulphur dioxide content of 200-250 parts per million in the potato. The potatoes may be treated with acid, e.g. acetic, citric, hydrochloric or phosphoric acid, to pH 5-6, before or after the sulphur dioxide treatment. Suitable containers are bags of heatsealable thermoplastic film, glass jars and metal cans.
