Abstract
A food capable of reducing the cholesterol concentration of the blood and comprising a finely divided vegetable fatty substance whose particles are individually enclosed in a layer of solids obtained by the evaporation and drying of skimmed milk, is prepared by emulsifying the skimmed milk with the fatty substance, and evaporating, cooling and hot air (i.e. spray-drying the emulsion). The process may be modified by adding more skimmed milk after emulsification and before evaporation, and by further emulsification after evaporation and before cooling. Fatty substances specified are corn oil, soya-bean oil and sunflower oil. Lecithin is exemplified as emulsifier. In the example the fat content of unskimmed cow milk is reduced to 0,02% by weight and the skimmed milk is emulsified with corn oil in a ratio by weight of 4 to 1. More skimmed milk is then added to give a product having a 5,5% by weight fat content, offensive volatiles in the corn oil are removed by evaporation, the product is further emulsified, then cooled and spray-dried to give a powder with a fat content of 40% by weight. A milk containing 3 to 6% by weight of fat is produced by dissolving the powder in water.
