Abstract

Alginate-containing jelly is prepared by forming a hot aqueous solution containing an alkali metal alginate, an acid of the group consisting of citric, tartaric and lactic acids, an alkali metal salt of one of these acids in amount sufficient to prevent gelling whilst hot, and a calcium salt of one of the acids in sufficient amount to ensure gelling on cooling, and cooling the mixture to cause it to gel. The preferred procedure is to mix, hot, separately prepared solutions of (a) the alkali metal alginate, and (b) the acid, the alkali metal salt and the calcium salt; the latter solution may be conveniently prepared by dissolving in water, alkali metal carbonate, calcium carbonate and the selected acid in amounts sufficient to leave free acid in solution. Sugar may be added if desired.
