Abstract

In the continuous fermentation of a yeast fermentable substrate such as brewer's wort to produce a fermented beverage, aerobic conditions favourable to yeast propagation are maintained in a yeast propagating stage and aerobic conditions favourable for alcohol production are maintained in a product formation stage, fermentable substrate is continuously introduced into the yeast propagating stage, effluent from the yeast propagating stage is continuously passed to the product formation stage, and yeast is separated from the effluent from the product formation stage and reintroduced in controlled amounts to the product formation stage to maintain the yeast concentration therein at a controlled level, preferably at 5 to 15% pressed cake. A predetermined temperature of 45 DEG to 90 DEG F. is maintained in both stages, that in the yeast propagating stage being about 10 DEG F. above that in the product formation stage. The product formation stage may be carried out in a series of separate series-connected vessels (Figs. 2 and 3, not shown). It is stated that a flocculating yeast may be employed.
