781,620. Frozen fish blocks. NORSK FROSSENFISK A/L. May 9, 1955 [May 7, 1954], No. 13316/55. Class 49. Frozen meat, particularly frozen fish, is prepared in flat blocks of uniform shape and weight by packing a former with pieces of the meat in fresh condition superposed with the meat fibres horizontal and the meat fibres of the different pieces generally parallel, deforming the packed pieces by a pressure of at least 0.5 kg./sq. cm. above atmospheric applied vertically to cause the pieces to fill completely the cross-section of the former, freezing the block of pieces so formed, and then cutting the frozen block along planes at right angles to the direction in which it was pressed. Before the pressing, the meat pieces may be treated with a substance which assists their adherence to one another, e.g. the pieces may be dipped into a solution containing actomysin extracted from muscle tissue. According to procedure described with reference to Figs. 1 and 2, fish fillets 2 are pressed in a tall former 1, of rectangular cross-section, having a movable bottom 3 which fits closely in the former and is the head of a lower piston, and having a movable top 7 which is the head of an upper piston. A number of the fillets are superposed, with head ends and tail ends alternating. on the bottom 3 (position A), the top 7 is moved down to press the fillets (position B), the lower piston is released to allow the bottom 3 to fall sufficiently to provide in the former 1 a packing space the same as for the first packing (position C), the top 7 is removed and more fillets are introduced (position D), and again the top 7 is brought down to exert pressure, the operations being repeated, with a lowering of the bottom 3 after each pressing, until a block of fillets ready for the freezing is produced (position E). Expulsion of the block from the former 1 after the freezing may be aided by operation of the top 7, and also, if desired, by momentarily heating the former 1. Saws may be employed for subdivision of the frozen block to conveniently packaged rectangular slabs.
