Abstract

Meat substitutes are made by mixing a liquid yeast degradation product containing a high proportion of amino-, amido-, peptido- and ammoniacal nitrogen, vitamins and mineral elements, a thickening agent consisting of an edible amylaceous substance; agar-agar, or gelatine, a vegetable, fruit or animal oil or fat, and a vegetable or fruit product, and heating the mixture to about 105 DEG C. Liver or additional vitamins may also be mixed with the liquid yeast product. According to Example 1, a product having the appearance, taste and consistency of p<\>zat<\>ae de foie gras is made by mixing the yeast product, olive oil, wheat flour, tomato extract, salt and spices, packing the mixture into cans and heating for 1 hr. According to example 2, a product having the appearance, consistency and taste of preserved tunny fish is made by mixing the yeast product, a mixture of olive oil and lard, potato starch and desiccated carrot powder, and treating the mixture as in Example 1. The Specification as open to inspection under Sect. 91 comprises also the heating to at least 50 DEG C. of mixtures of any product obtained by the decomposition or degradation of yeast with any binding substance. This subject-matter does not appear in the Specification as accepted.
