Abstract

A mustard product is made by allowing crushed black or white mustard seed to stand with vinegar and then filtering or pressing the liquid from the solid residue. The mustard seed may be mixed with other seed containing essential oil or vegetable material containing flavouring substances, e.g. fennel seed, seed of Anethum graveolens, horseradish, curry. The pressed or filtered solid residue may be mixed with an oil and pressed, the resulting liquid being added to the liquid first obtained. An oil such as cottonseed, fatty mustard, arachis or sesame oil, glycerol or a diol may be added to the mustard seed or to the product. A colouring substance, e.g. chlorophyll, curcuma, caramel or artificial colouring substance may be added to the product. Products which are more viscous, including products sufficiently viscous as to be spreadable, may be obtained by addition of gelatine, agar, pectin, starch, and the like.
