Abstract

In the treatment of potatoes which includes cooking and separation of the cells as by mashing, followed by agitation or other mechanical treatment, heating, cooling or freezing and then drying, treatment with calcium ions is effected after separation of the cells and before any further treatment liable to damage the cell walls. The calcium ions in concentration up to about .075 per cent. calculated on separated potato may be provided by soluble calcium salts, e.g., chloride, acetate, sulfamate or by insoluble calcium salts in the presence of sufficient acid to bring the requisite amount of calcium into solution, e.g., the carbonate dissolved in hydrochloric or acetic acid, or partly by milk. Specifications 542,125 and 566,828 are referred to. Reference has been directed by the Comptroller to Specification 566,828.
