533,258. Sugar syrup; stabilizers for ice cream &c. NAUGLE, J. J. Oct. 24, 1939, No. 28582. [Classes 28 (i) and 127] A sugar syrup for use as a stabilizer in making ice cream, milk and other food products &c. consists of a syrup containing an aqueous extract prepared from Irish moss and purified by treatment with activated carbon. The moss may be soaked and boiled with water and the extract mixed with activated carbon. The mixture is treated with alkali phosphate of sodium hydrate or carbonate to obtain a pH of 7 to 8 before filtering. Granulated sugar or a syrup from unwashed raw sugar is added. Alternatively the sugar or syrup may be added to the extract before purification with activated carbon, or the extract may be made in presence of sugar.
