[Class 28 (i)] [Also in Group f] In the manufacture of ice cream from a liquid vegetable oil such as ground nut oil, the oil is gradually dispersed into egg-yolk, or a concentrated aqueous suspension of milk-powder &c. to form an emulsion nucleus and after working therein an aqueous solution or suspension of dry ingredients such as are used in ice-cream, the resultant mix is frozen with or without agitation. Additional quantities of the oil may be worked into the emulsion before addition of the remaining ingredients. Emulsifiers may be added to the oil, comprising a combination of a phosphalide such as lecithin obtained from soya bean oil or egg yolk, and a long-chain aliphatic compound containing at least one terminal or substantially terminal alcoholic hydroxy group in the molecule. Examples of the latter are cetyl alcohol, octodecyl alcohol, monoglycerides of higher fatty acids, mixtures of mono-and diglycerides and mono-fatty acid esters of glycol. The preferred quantities for dissolving in the oil are specified as 1 to 2 per cent of a soya lecithin and 4 to 5 per cent of monoglycerides of palmitic and stearic acids. In examples; the ice-cream ingredients for working into the emulsion comprise aqueous suspensions of skimmed-milk powder, sugar and gelatine.
