514,102. Puffed maize. KELLOGG, J. L. Feb. 25, 1938, No. 6079. Convention date, Feb. 25, 1937. [Class 58] For producing a puffed ready-to-eat cereal product from maize, hominy or maize grits, the maize is cooked, subjected to mechanical pressure to alter the internal structure without reducing the grain to a flaked condition, and thereafter the material is explosively puffed Maize grits, mixed with water, are cooked under 15-25 lbs. steam pressure for 40- 80 minutes; the cooked grits are dried to a moisture content of about 30-40 per cent., compressed between rolls set about .06-.095 inch apart, dried to a moisture content of about 9-15 per cent. and tempered for 12-30 hours to obtain substantially uniform moisture content, and finally puffed in a gun by heating therein for 5-15 minutes to develop a pressure of 200 lbs. per sq. inch, the gun cover being then suddenly removed.
