[Class 121] Mill starch obtained by steeping and comminuting maize and separating germ and slop is subjected to a series of centrifuging operations in countercurrent to a wash water introduced into a later centrifugal of the series, the starch underflow and the gluten overflow moving in opposite directions through the series, at least a part of the gluten-bearing overflow from a later centrifugal being introduced into the first centrifugal. The overflow from the first centrifugal is treated to remove the gluten and is then returned to the steeps. Waste process water from any stage is, in general, re-used in an earlier stage of the process. The starch milk, or a dilute component thereof, e.g. from the fine slop separation, may be concentrated before being fed to the centrifugals. A part of the overflow from a centrifugal may be returned to that centrifugal. Some of the starch may be removed in gravity separators from the starch milk before the latter is fed to the centrifugals. The process is illustrated by flow sheets.
