Abstract

Albuminous solutions having properties similar to egg-albumen are made by adding about 0,3 per cent of a water-soluble calcium or magnesium salt of a strong acid to a concentrated solution of casein such as concentrated skim-milk or an aqueous extract of albuminous seeds. Preferably calcium or magnesium chloride is employed as the salt, but water-soluble phosphates or other water-soluble salts of strong acids may be used. Examples describe the production of the albumen solutions from concentrated skim milk and de-oiled soya bean extract.
