Abstract
Milk and other liquids are pasteurized by heating the liquid to a predetermined temperature and promptly cooling to a lower temperature before pasteurization occurs, then heating to, and holding it for a period of time sufficient to effect pasteurization at a pasteurizing temperature which is higher than the said predetermined temperature. As described, the liquid is first heated up to about 100 DEG F. and then raised to a predetermined temperature between 150-160 DEG F. in a time which may vary from about 2 secs. to 4 mins., cooled to about 145 DEG F. or less in about one second to one minute and next heated in about 2 secs. to 2 mins. to the final higher temperature, which is about 160 DEG F., at which it is held for a minimum period of about 15 secs. The time for the final cooling to bottling or storage temperature may be about 2 secs. to 4 mins., e.g. the liquid may be cooled down to 38 DEG F. in about 3 secs. The liquid may be held for a short time, e.g. 1-10 secs., at the preheating temperature. The preliminary heating and cooling may be repeated one or more times. The control of the preliminary and final heating temperatures may be effected automatically.
