Abstract

A pectinous material which disperses readily in water without forming lumps and which dissolves fairly well in hot water is obtained from readily soluble but lump-forming calcium-precipitable pectin by increasing its calcium content to the desired extent, e.g. by washing with calcium acetate in alcohol, or from insoluble calcium pectinate by reducing its calcium content, e.g. by washing with acidified alcohol. Specification 461,200 is referred to.
