[Class 49.] In appa,ratus for cooking and sterilizing substances enclosed in bottles or other containers which are conveyed on carriers attached to chains which traverse a series of tanks and finally enter the sterilizing chamber containing steam or other vapour under pressure, the containers entering and leaving the chamber through water seals, means are provided for superheating the steam or other vapour in the chamber so as to obtain a higher temperature than that corresponding to the boiling-point of water at the pressure maintained by the water seals. In one form, milk which has been filled warm, e.g. at 150‹ F., into bottles is sterilized by inserting the bottles into carriers e attached to an endless chain conveyer f which takes them through a water seal g at 212‹ F. in a tank A, then through sterilizing compartments B, B<1>, B<11>, filled with steam under pressure, e.g. 2 lbs. per square inch, and superheated by steam coils i, and out through water seal g in a tank c. The sterilizing compartments have a safety valve r and a non-return valve to prevent a vacuum forming therein. The tanks A, C have overflow gutters q and are connected by a pipe d. The bottles on leaving tank C pass down under cooling sprays k at gradually decreasing temperatures and finally to the discharge end m through a tank D in which a counter flow of cooling water from an inlet n to an outlet o is provided. The apparatus has thermostatic devices for controlling the temperatures therein. In modifications, for treating bottles filled with cold milk, the bottles pass down and up through two compartments filled with water at 100‹ F. and 150‹ F. respectively before entering chamber A, or pass first through tank D, the temperature of which rises from 100‹ F. at entry to 150‹ F. at the discharge end. In a further form, the bottles enter and leave the sterilizing compartments through the same water seal.
