Abstract

Raw sugar melt is treated with chlorine or with an agent adapted to deliver chlorine and the melt is maintained in an inert or sterile atmosphere during transportation. The raw sugar, which may be any well-known grade of cane sugar, is washed and melted at 150-180 DEG F. for sufficient time to sterilize it so that there will be neither yeast nor invertase present, and the hydrogen ion concentration is corrected by the addition of sodium carbonate or the like to a value of 7 to 7,5. The melt is then subjected to a treatment with a weak solution of chlorine gas or liquid chlorine itself, and any acidity is again removed. The melt is then pumped into suitable containers for transport and covered with a sterile atmosphere of air, carbon dioxide, or nitrogen. Means may be provided for adding further chlorine during transportation with a corresponding correction of acidity. The sterilization may also be effected by means of an alkali or alkaline earth chloride, preferably in the form of "bleach liquor."
