Abstract

In preparing meat for marketing, the muscular masses are removed from the carcass while it still retains its animal heat and are then, after, if desired, systematic separation from one another, subjected to chilling to remove animal heat. The chilling is effected when the meat is in relaxed position and not, as in the ordinary method, under tension. Bone free cuts are obtained.
